- 1 pound dried red kidney beans
- 1 smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 4 cups cooked white rice
- Chopped parsley for garnish
Instructions
- Soak the beans overnight or use quick soak method.
- In a large pot, sauté sausage slices until browned. Add onion, bell pepper, and garlic; cook until softened.
- Add soaked beans, spices, bay leaves, and enough water to cover. Bring to a boil, then simmer for about 1.5 hours until beans are tender.
- Remove bay leaves, adjust seasoning with salt and pepper.
- Serve over cooked rice, garnished with chopped parsley.

- For extra flavor, add a splash of hot sauce or smoked paprika.
