- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat butter, eggs, sour cream, and vanilla until smooth.
- Gradually add dry ingredients to wet, mixing just until combined. Fold in blueberries.
- In a small bowl, mix cream cheese with a little sugar if desired.
- Pour half the batter into the loaf pan, spread cream cheese mixture, then top with remaining batter.
- Using a toothpick or knife, swirl the layers for a marbled effect.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Ensure butter and cream cheese are softened for easier mixing.
- Fresh blueberries work best for vibrant color and flavor.
- You can substitute with frozen blueberries, but fold them gently to prevent color bleeding.
