- 1 packet active dry yeast (2 ¼ teaspoons)

- 4 cups all-purpose flour
- ½ teaspoon salt
- 2 tablespoons unsalted butter, melted

Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until bubbly.
- Add flour, salt, and melted butter. Mix until a dough forms.
- Knead on a floured surface for about 5 minutes until smooth.
- Place dough in a greased bowl, cover with a damp towel, and let rise for 1 hour.
- Preheat oven to 425°F (220°C). Punch down dough and break into 1-inch pieces.
- Boil water with 1/4 cup baking soda in a large pot. Drop pretzel bites in batches for 30 seconds each, then transfer to a baking sheet.
- Brush with melted butter and sprinkle with coarse sea salt.
- Bake for 12-15 minutes until golden brown.
Notes
- Ensure water is warm but not hot to activate yeast properly.
- Boiling the pretzel bites gives them the characteristic chewy exterior.
