Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • For glaze: 4 oz cream cheese, softened; 1/2 cup powdered sugar; 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine mashed bananas, grated carrots, eggs, honey, and oil.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. Mix dry ingredients into wet until just combined. Fold in walnuts if using.
  5. Pour batter into prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. While baking, prepare the glaze by mixing softened cream cheese, powdered sugar, and vanilla until smooth.
  7. Let bread cool for 15 minutes, then spread glaze over the top.

  • Use ripe bananas for extra sweetness.
