- 8 large eggs
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup chopped cooked bacon or ham
- 1/4 cup chopped green onions
- 1/2 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk eggs, salt, and pepper.
- Cook bacon until crisp, then chop.
- Heat olive oil in a skillet and scramble eggs until just set.
- Lay tortillas flat and divide scrambled eggs, bacon, cheese, green onions, and salsa among them.
- Roll up tortillas and place seam-side down in a baking dish.
- Sprinkle additional cheese on top and bake for 20 minutes until bubbly and golden.
- Garnish with extra green onions and serve hot.
Notes
- You can substitute cooked sausage or vegetables for the bacon.
- Serve with sour cream or guacamole for extra flavor.
