- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, beat together butter and sugar until creamy. Add egg and vanilla, mix well.
- Combine flour, cinnamon, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Scoop spoonfuls of dough and shape into cookies. Place on prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes until golden brown. Let cool.
- Optional: Drizzle with icing before serving.

- Store in an airtight container for up to 3 days.
- You can add a sprinkle of cinnamon sugar on top before baking for extra flavor.
