Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add sliced onions and cook slowly, stirring frequently, until caramelized (about 30-40 minutes).
- Stir in thyme, salt, and pepper.
- Pour in beef broth and bring to a simmer. Cook for another 15 minutes.
- Preheat oven to 400°F (200°C).
- Toast baguette slices until golden.
- Ladle soup into oven-safe bowls, top with toasted bread and shredded cheese.
- Broil until cheese is bubbly and golden, about 3-5 minutes.
