- 3 pounds ripe tomatoes
- 1 large onion, chopped
- 4 cloves garlic
- 2 tablespoons olive oil
- 1 cup fresh basil leaves
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Arrange tomatoes on a baking sheet and roast for 30 minutes.
- In a pot, sauté onion and garlic in olive oil until fragrant.
- Add roasted tomatoes, vegetable broth, salt, and pepper. Bring to a simmer.
- Use an immersion blender to blend until smooth. Stir in basil leaves.
- Simmer for 10 minutes before serving hot garnished with extra basil.
