- 2 pounds beef chuck roast, cut into chunks
- 4 large carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Place beef chunks into the slow cooker.
- Add carrots, potatoes, celery, onion, and garlic over the beef.
- Pour in beef broth and stir in tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
- Serve hot with fresh bread or over rice if desired.
Notes
- You can add peas or green beans in the last 30 minutes for extra freshness.
- Adjust seasoning as preferred for a richer flavor.
