- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, powdered sugar, and salt; cut in butter until crumbly. Press into a greased baking dish and bake for 15 minutes.
- In a saucepan, combine cranberries, sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Pour over the pre-baked crust.
- Bake for an additional 20 minutes until filling is set.
- Cool completely before glazing and serving.
Notes
- Chill the bars for at least 2 hours before slicing for cleaner cuts.
- You can substitute frozen cranberries if fresh are unavailable.
