- 4 large russet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1 cup whole milk
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh chives
Instructions
- Preheat oven to 375°F (190°C).
- Cook potatoes in boiling water until tender, about 15 minutes. Drain well.
- Mash potatoes with butter, milk, and sour cream until smooth and creamy.
- Season with salt and pepper.
- Transfer to a baking dish, smooth the top, and bake for 20-25 minutes until golden and bubbling.
- Garnish with chopped chives before serving.
Notes
- For extra creaminess, add more sour cream or milk.
- Can be made ahead and reheated in the oven.
