- 1 large head cauliflower, chopped into florets
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and pepper. Roast for 20 minutes until tender and slightly golden.
- In a mixing bowl, combine shredded chicken, buffalo sauce, sour cream, and half of the cheese.
- Spread roasted cauliflower in a baking dish. Top with buffalo chicken mixture and sprinkle remaining cheese.
- Bake for 15-20 minutes until cheese is bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
- You can substitute shredded turkey for chicken for a different flavor.
- Adjust buffalo sauce for spice preference.
- Best enjoyed hot with a side of celery sticks or a fresh salad.
