Ingredients

  • 1 lb Italian sausage, sliced
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion and garlic until fragrant.
  4. Add orzo and cook for 2 minutes, stirring frequently.
  5. Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is al dente.
  6. Stir in heavy cream, cooked sausage, spinach, and Parmesan cheese. Cook until heated through.
  7. Season with salt and pepper, then serve hot.
