- 1 pound cooked chicken, shredded
- 2 cans white beans, drained
- 1 cup corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Shredded cheese and cilantro for garnish
Instructions
- In a large pot, sauté onion and garlic until fragrant.
- Add chicken, beans, corn, cumin, chili powder, salt, and pepper. Stir to combine.
- Pour in chicken broth and bring to a simmer.
- Reduce heat and stir in heavy cream. Simmer for 10 minutes to allow flavors to meld.
- Serve hot, garnished with shredded cheese and cilantro.
Notes
- You can substitute the heavy cream with Greek yogurt for a lighter version.
- For extra spice, add chopped jalapenos or hot sauce.
