Instructions
- Preheat oil in a deep fryer or large skillet over medium-high heat.
- Mix shredded chicken, corn, black beans, cheese, chili powder, and cumin in a bowl.
- Place a scoop of filling onto each egg roll wrapper and roll tightly, sealing edges with water.
- Deep fry the egg rolls until golden brown and crispy, about 3-4 minutes.
- Drain on paper towels and garnish with cilantro and jalapenos. Serve warm.
