Instructions
- Place shredded zucchini in a clean towel and squeeze out excess moisture.
- In a mixing bowl, combine zucchini, flour, Parmesan, egg, garlic, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of batter into the skillet, flatten slightly, and cook until golden brown on both sides, about 3-4 minutes per side.
- Drain on paper towels and serve warm.
Notes
- For extra crunch, add breadcrumbs to the mixture.
- Serve with a dollop of sour cream or yogurt for added flavor.
