- 1 lb beef stew meat
- 3 large potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet and brown beef stew meat until browned on all sides.
- Place browned meat in Crock Pot, add diced potatoes, sliced carrots, chopped onion, and minced garlic.
- Pour in beef broth, add salt, pepper, and thyme. Stir to combine.
- Cover and cook on low for 6-8 hours, until meat and vegetables are tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- You can add peas or corn during the last hour of cooking for extra flavor and texture.
- For a thicker stew, mix 2 tbsp flour with a little water and stir into the stew during the last 30 minutes.
