Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine chopped spinach, feta, garlic, salt, and pepper.
- Cut a slit in each salmon fillet to form a pocket.
- Stuff each fillet with the spinach-Feta mixture.
- Brush the fillets with olive oil and place on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until salmon is flaky and cooked through.
- Serve with lemon wedges and enjoy!
