Ingredients

  • 2 cups shredded cooked BBQ chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • Salsa and sour cream for serving

Instructions

  1. Preheat a skillet over medium heat and brush with olive oil.
  2. Place one tortilla in the skillet and evenly spread half of the shredded chicken over the top.
  3. Sprinkle with cheeses and chopped cilantro.
  4. Top with another tortilla and cook until the bottom is golden brown and the cheese starts to melt, about 3-4 minutes.
  5. Carefully flip and cook the other side until golden and cheese is fully melted.
  6. Repeat with remaining ingredients. Slice into wedges and serve with salsa and sour cream.
