- 2 cups shredded cooked BBQ chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Salsa and sour cream for serving
Instructions
- Preheat a skillet over medium heat and brush with olive oil.
- Place one tortilla in the skillet and evenly spread half of the shredded chicken over the top.
- Sprinkle with cheeses and chopped cilantro.
- Top with another tortilla and cook until the bottom is golden brown and the cheese starts to melt, about 3-4 minutes.
- Carefully flip and cook the other side until golden and cheese is fully melted.
- Repeat with remaining ingredients. Slice into wedges and serve with salsa and sour cream.

- Use leftover cooked chicken for quick assembly.
- Adjust cheese levels to your taste.
- Serve immediately for best crispiness.
