- 4 large potatoes, diced
- 1 lb beef sirloin or flank steak, sliced
- 6 slices bacon, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with 1 tablespoon olive oil, garlic powder, salt, and pepper. Roast for 25-30 minutes until crispy.
- In a skillet, cook bacon until crispy. Remove and set aside.
- Cook beef slices in the rendered bacon fat until browned, about 3-4 minutes per side.
- Arrange roasted potatoes on a serving plate, top with cooked beef slices, crispy bacon, and garnish with parsley. Serve hot.
Notes
- For extra flavor, add a dash of smoked paprika or chopped onions to the potatoes before roasting.
- Can substitute with ground beef for a different texture.
