- 2 cans black beans, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and minced garlic until translucent.
- Add cumin, salt, and pepper; cook for 1 minute.
- Add black beans and vegetable broth, bring to a boil.
- Reduce heat and simmer for 20 minutes to blend flavors.
- Use an immersion blender to slightly purée part of the soup for a thicker texture, if desired.
- Serve hot with your favorite toppings.
Notes
For a creamier texture, blend a portion of the soup and stir back into the pot. Garnish with cilantro, sour cream, and lime for added flavor.
