Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and minced garlic until fragrant and translucent.
- Add shredded chicken and cook for another 2-3 minutes.
- Pour in chicken broth and bring to a simmer.
- Add pasta and cook until al dente.
- Stir in heavy cream, season with salt and pepper, and cook for another 2 minutes.
- Garnish with fresh parsley and serve hot.
Notes
For a thicker soup, add a tablespoon of flour to the sautéed onions. Feel free to include vegetables like spinach or carrots for added nutrition.
