- 2 lbs boneless chicken thighs or breasts
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon fresh grated ginger
- 2 teaspoons cornstarch (optional for thickening)
- Sesame seeds and chopped green onions for garnish
Instructions
- Place chicken in the crockpot.
- Mix soy sauce, honey, rice vinegar, garlic, and ginger in a bowl and pour over chicken.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Optional: Thicken sauce with cornstarch mixed with a bit of water, then add to crockpot and cook until bubbly.
- Serve chicken over steamed rice, garnished with sesame seeds and green onions.
Notes
- Feel free to adjust sweetness by adding more honey.
- Good with broccoli or steamed vegetables on the side.
