- 1 pound Italian sausage, sliced
- 1 package (9 oz) tortellini
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese and basil for garnish
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove excess fat if necessary.
- Add chopped onion and garlic; sauté until translucent.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Add tortellini and Italian seasoning; cook according to package instructions.
- Stir in spinach until wilted. Season with salt and pepper.
- Serve hot, garnished with Parmesan cheese and basil.

- Frozen tortellini can be used as a quick substitute.
