Instructions
- Preheat oven to 400°F (200°C). In a small bowl, mix Parmesan cheese, thyme, paprika, salt, and pepper.
- Rub chicken breasts with olive oil, then coat with Parmesan mixture.
- Arrange chicken and potatoes on a baking sheet lined with parchment paper.
- Sprinkle minced garlic over potatoes and chicken.
- Bake for 25-30 minutes, until chicken is golden and cooked through and potatoes are tender.
- Garnish with chopped parsley before serving.
