- Salt and pepper to taste
- Lime wedges and chopped cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Combine chili powder, cumin, paprika, garlic powder, salt, and pepper in a small bowl.
- Coat chicken slices with 1 tbsp olive oil and spice mixture.
- Arrange chicken, peppers, and onions on a sheet pan.
- Drizzle remaining olive oil over vegetables and toss gently.
- Bake for 20-25 minutes until chicken is cooked and veggies are tender.
- Garnish with fresh cilantro and lime wedges before serving.
