- 1.5 lbs boneless chicken thighs, cubed
- 3 large carrots, sliced
- 3 potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon thyme

- Salt and pepper to taste
Instructions
- Place all ingredients into the slow cooker.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred chicken slightly with a fork, stir, and serve hot.

- You can substitute chicken breasts for thighs if preferred.
- Garnish with fresh parsley before serving for extra flavor.
