- 1 cup coconut milk
- 2 tbsp lemon juice
- 2 tbsp olive oil

Instructions
- Preheat oven to 375°F (190°C).
- Season the cod fillets with salt, pepper, and garlic powder.
- Place fillets on a baking sheet lined with parchment paper, drizzle with olive oil.
- Bake for 12-15 minutes until flaky.
- Meanwhile, heat coconut milk and lemon juice in a small saucepan over low heat.
- Simmer gently until slightly thickened, then pour over the cooked fish.
- Garnish with fresh parsley and serve hot.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- Serve with steamed vegetables or rice.
