- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp tomato sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook ground meat with onions and garlic until browned.
- Mix cooked rice, tomato sauce, Italian seasoning, salt, and pepper into the meat mixture.
- Stuff bell peppers with the mixture and top with shredded cheese.
- Place peppers in a baking dish and bake for 25-30 minutes until cheese is melted and peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- You can substitute ground chicken or turkey for beef.
- For a vegetarian version, use cooked lentils or beans instead of meat.
- Serve with a side salad or crusty bread for a complete meal.
