Instructions
- In a bowl, whisk eggs with mayonnaise, soy sauce, salt, and pepper until well combined.
- Cook the eggs in a non-stick pan over medium heat, stirring gently until fluffy and cooked through.
- Remove from heat and let cool slightly.
- Spread butter on bread slices if desired, then layer the fluffy scrambled eggs between bread slices.
- Cut the sandwich in half and garnish with lettuce if desired.
Notes
- For creamier eggs, add a little extra mayonnaise.
- Use fresh white bread for the best texture.
