Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
- While potatoes roast, season chicken breasts with salt and pepper, then grill until fully cooked. Slice into strips.
- Prepare rice according to package instructions or use pre-cooked rice.
- Assemble bowls by placing rice at the base, topping with sliced chicken, roasted sweet potatoes, and fresh herbs. Drizzle with your favorite sauce and serve immediately.
