- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and set aside.
- In a large bowl, combine cooked pasta, corn, cherry tomatoes, and cilantro.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour dressing over the pasta mixture and toss until evenly coated.
- Chill for at least 30 minutes before serving to enhance flavors.
Notes
- Can substitute Greek yogurt for mayonnaise for a lighter option.
- Add diced avocados or jalapenos for extra flavor.
