- 1 pound kielbasa sausage, sliced
- 1 medium onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté kielbasa slices until browned. Remove and set aside.
- In the same pot, add onions, carrots, and celery; cook until tender, about 5-7 minutes.
- Add garlic and cook for another minute.
- Stir in diced tomatoes, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the cooked kielbasa back to the pot and simmer for an additional 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- You can substitute smoked sausage for kielbasa for a different smoky flavor.
- Feel free to add potatoes or greens for extra heartiness and nutrients.
