Ingredients

  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté kielbasa slices until browned. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery; cook until tender, about 5-7 minutes.
  3. Add garlic and cook for another minute.
  4. Stir in diced tomatoes, chicken broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the cooked kielbasa back to the pot and simmer for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.
