Ingredients

  • 1 pound ground beef or turkey
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or chicken broth
  • 8 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 8 oz lasagna noodles, broken into pieces
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground meat and cook until browned. Remove excess fat.
  2. Add onion and garlic, cook until fragrant and translucent.
  3. Pour in crushed tomatoes and broth, bring to a boil.
  4. Add broken lasagna noodles, reduce heat, and simmer until noodles are tender, about 10 minutes.
  5. Stir in ricotta cheese, mozzarella, basil, oregano, salt, and pepper. Cook until cheese melts and soup thickens slightly.
  6. Serve hot, garnished with additional cheese and fresh basil if desired.
