- 1 pound ground beef or turkey
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or chicken broth
- 8 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- 8 oz lasagna noodles, broken into pieces
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground meat and cook until browned. Remove excess fat.
- Add onion and garlic, cook until fragrant and translucent.
- Pour in crushed tomatoes and broth, bring to a boil.
- Add broken lasagna noodles, reduce heat, and simmer until noodles are tender, about 10 minutes.
- Stir in ricotta cheese, mozzarella, basil, oregano, salt, and pepper. Cook until cheese melts and soup thickens slightly.
- Serve hot, garnished with additional cheese and fresh basil if desired.
Notes
- Feel free to substitute ground chicken or plant-based meat alternatives.
- For a creamier texture, add a splash of heavy cream before serving.
