- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or chicken broth
- 1 cup chopped spinach
- Fresh basil and parsley for garnish
Instructions
- Preheat oven to 375°F. In a bowl, mix ground beef, breadcrumbs, Parmesan, garlic, egg, Italian seasoning, salt, and pepper. Form into small meatballs.
- Bake meatballs on a baking sheet for 20 minutes until cooked through.
- In a large pot, combine diced tomatoes, broth, and cooked meatballs. Bring to a boil.
- Reduce heat, add spinach, and simmer for 10 minutes.
- Garnish with fresh basil and parsley before serving.
