Ingredients

- 2 lbs beef chuck roast, cut into chunks
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef broth
- 200g mushrooms, sliced
- 2 tbsp tomato paste
- 1 tbsp thyme
- Salt and pepper to taste
Instructions
- Sear beef chunks in a skillet until browned, then transfer to slow cooker.
- Add carrots, onion, garlic, mushrooms, tomato paste, thyme, salt, and pepper.
- Pour in red wine and beef broth.
- Cook on low for 8 hours until beef is tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For richer flavor, marinate beef with wine and herbs overnight.
- Use a good quality red wine for depth of flavor.
