- 8 oz (225 g) pasta (fettuccine or penne)
- 2 cups sliced mushrooms
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until browned, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in heavy cream, bring to a simmer, then stir in parmesan cheese until melted and sauce thickens.
- Add spinach; cook until wilted, about 2 minutes.
- Mix in cooked pasta, toss to coat evenly, season with salt and pepper.
- Serve hot, garnished with fresh basil.
Notes
- Feel free to add cooked chicken or shrimp for extra protein.
- Adjust cheese and cream for desired richness.
