Ingredients

  • 8 oz (225 g) pasta (fettuccine or penne)
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until browned, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Pour in heavy cream, bring to a simmer, then stir in parmesan cheese until melted and sauce thickens.
  5. Add spinach; cook until wilted, about 2 minutes.
  6. Mix in cooked pasta, toss to coat evenly, season with salt and pepper.
  7. Serve hot, garnished with fresh basil.
