- 3 large sweet potatoes, peeled and sliced
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 375°F (190°C). Arrange sweet potato slices in a baking dish.
- In a saucepan, melt butter over medium heat. Stir in brown sugar, heavy cream, vanilla, and salt. Bring to a boil, then reduce heat and simmer for 5 minutes until thickened.
- Pour caramel sauce over the sweet potatoes evenly.
- Bake uncovered for 25-30 minutes until potatoes are tender and caramel sauce is bubbly, occasionally basting with sauce.
- Serve warm, garnished with additional caramel or herbs if desired.

- Adjust sweetness by adding more or less brown sugar as preferred.
