- 2 large cucumbers, thinly sliced
- 8 slices of whole wheat or white bread
- 8 oz cream cheese, softened
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Mix the softened cream cheese with lemon juice, dill, salt, and pepper in a bowl.
- Spread the herb cream cheese evenly on each slice of bread.
- Layer thin cucumber slices on four slices of bread, then top with the remaining bread slices to form sandwiches.
- Cut off crusts if desired and slice into quarters or desired shapes.

- You can substitute cream cheese with Greek yogurt for a healthier option.
