- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, sliced
- 2 tablespoons Cajun seasoning
- 1 cup orzo pasta
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken slices with Cajun seasoning, then cook until browned and cooked through. Remove and set aside.
- Add chopped peppers and garlic to the skillet, sauté until tender.
- Add orzo and cook briefly, then pour in chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer until orzo is cooked and liquid is absorbed.
- Stir in heavy cream, season with salt and pepper, and cook until heated through.
- Return chicken to the skillet, toss to combine, garnish with parsley, and serve hot.
Notes
- Feel free to add other vegetables like onions or spinach for variation.
- Adjust spice level by adding more or less Cajun seasoning.
