- 4 large bell peppers (any color)
- 2 cups cooked shredded chicken
- 1 cup cooked rice

- 1/2 cup black beans (optional)

- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Black olives for decorations
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the peppers and remove seeds. Lightly brush with olive oil.
- In a bowl, combine shredded chicken, cooked rice, onions, spices, salt, and pepper.
- Fill each pepper with the mixture and place in a baking dish.
- Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Decorate with black olives to create spooky faces or designs.
