Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a mixing bowl, cream together butter and sugar until smooth.
- Mix in vanilla extract.
- Add flour gradually and mix until combined.
- Form dough into 1-inch balls and place on prepared baking sheet.
- Using your finger or a small spoon, make an indentation in each ball and fill with a small spoonful of raspberry jam.
- Bake for 15-18 minutes or until edges are lightly golden.
- Let cookies cool slightly, then roll in powdered sugar while still warm.
