- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Chopped green onions and extra cheese for topping
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and garlic; cook until transparent.
- Stir in chicken broth, diced potatoes, Worcestershire sauce, salt, and pepper. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in shredded cheddar cheese and milk until cheese melts and soup is creamy.
- Serve hot, topped with chopped green onions and additional cheese if desired.
Notes
- For extra flavor, add sliced pickles or bacon bits.
- Can be made ahead and reheated.
